newsletter, fall 2013

Fall Greetings to you,

I hope you are taking advantage of the last farmers’ markets of the season
and the bounty of fall harvest. And this is the reason…

Dehydration is the art of transforming nutrition-packed ingredients into
satisfying, crunchy snacks and meals. It is the best way to preserve
flavors and nutrition, virtually intact.

There is nothing like having these preserved fruits and vegetables in your
cupboard. In the cold winter months, their tastes and aromas will remind
you of the sunshine and warmth of summer.

During my forty years as a vegetarian/vegan, I have always searched for
healthy snacks with a crunchy texture. Aside from nuts, I was stymied
until I discovered dehydrated crackers,
kale crunch and other treats.

Dehydration opened a whole new world for me. I have made many
wholesome, yummy treats like no-flour Chocolate Chip Cookies, Chocolate
Walnut Cookies, Peppermint Macaroons, Apple-Carrot Scones, Not-Cheez-
Its and I'm working on printable e-books. All dairy-free, gluten-free!

In the meantime, all the basics and beyond for dehydrating crackers,
bread and the ultimate kale crunch are in my new DVD.

Produce Tips

The first number on those loose fruit & vegetable stickers reveals much.

3 or 4: conventional, may be sprayed with pesticides, fertilizers, fungicides (e.g., 4011)

9: organically grown, meets standards for sustainable farming (e.g., 94129)

8: GMO...rarely found because big food industry lobbies heavily to prevent identification of genetically-modified produce and packaged goods! (e.g., 83137)

Product Reviews

Jen's Zen Chocolate Sauce

There are lots of dairy-free desserts which cry out for a topping. Sure, you can use fruits, nuts or other favorites. Occasionally though, there is nothing like an old-fashioned chocolate sundae.

Jen's Zen is a yummy, new, gluten-free chocolate sauce made with low glycemic coconut sugar and coconut milk...Paired with a non-dairy “ice cream”, is a healthy combination hard to beat. Enjoy! www.jenszen.com

We love naturally-fermented foods and eat some every day. There is a great book/ebook we use called: “Cultured: Make Healthy Fermented Foods at Home” It spans the whole range of pickles, vegetables, drinks, krauts, breads, cheeses and includes more than 70 recipes by well-know, natural health experts. Lenore will be talking more about this during her Sauerkraut workshop on October 19th.
